Moussaka – مسقعه

Ingredients

  • 2 Big Eggplants
  • 1 Red Pepper
  • 1 Green Pepper
  • 1 Orange Pepper
  • 2 Green Thai Chili
  • 2 Chopped Tomatoes
  • 2 Chopped Onions
  • 5 Garlic Cloves
  • 2 Cups Crushed Tomatoes
  • 1 Pound Ground Beef
  • 1 Teaspoon Cumin
  • 1 Teaspoon Salt

For Ground beef filling

  • 1 Pound Ground Beef
  • 1 Tablespoon All Spices
  • 2 Finely Chopped Onions
  • 1/8 Teaspoon Nutmeg
  • 2 Cups Crushed Tomatoes
  • 1/4 Cup Minced Garlic

Directions

  • Prepare filling by sauteing onion in avocado oil.
  • Make sure to add the all spices and fry for a few seconds to get the smell out, then add garlic.
  • Add ground beef to the sauteed mix and mix well until ground beef is cooked, then add the crushed tomato.
  • Set the filling aside and prepare your vegetables.
  • Cut the eggplants vertically.
  • Cut bell peppers, tomatoes and onions.
  • Sprinkle some salt, pepper, cumin, and corriander on the vegetables.
  • On a medium high pan add avocado oil and saute your eggplants and pepper on both sides.
  • Start assembly by adding a layer of eggplant, bell peppers, crushed tomatoes, onions.
  • In the middle, add your ground beef filling then top with another layer of eggplant, bell peppers, onions, and tomato slices.
  • Mix 1 cup crushed tomatoes, 1/2 cup hot water or stock, minced garlic, salt, and pepper, and add to the eggplant casserole.
  • Put in the lower rack on 500 for 30 to 45 mins and until top layer is golden brown (or grill for 5 to 10 minutes).

A healthy alternative for frying: generously spray your vegetables with avocado oil, salt pepper cumin Corriander, and place them in an air fryer basket for 5 minutes on each side. Or bake on 500 for 10 minutes on each side.
