Grilled Chicken with Charcoal – فراخ بالفحم

Ingredients

  • 1 Big Chicken Butterflied
  • 1/2 Cup Minced Onions
  • 1/2 Cup Crushed Tomatoes
  • 1/4 Cup Vinegar
  • 1/4 Cup Minced Garlic
  • 1 Teaspoon Black Pepper
  • 1 Tablespoon Cardomom
  • 1 Tablespoon Salt
  • 1 Teaspoon 7 Spices

Directions

  • Open your chicken from the back like a butterfly.
  • Cover with plastic wrap and with a pounder, gently pound the chicken to make it cook faster.
  • Mix the Marinade and with your hand squeeze and combine until all is well mixed.
  • Lift the skin gently and with a small knife score lines across the chicken.
  • Stuff the chicken with the marinade under the skin and all around.
  • Let it rest in the fridge for a few hours.
  • Preheat your oven on 500.
  • Spray your cooking rack with avocado oil and add the chicken on top with a pan underneath.
  • Let it cook for 1.5 hours or until inner temp is 165 F.
  • After the chicken is cooked put it in a deep pan with a cover.
  • Preheat a piece of charcoal on the stove top.
  • When the charchol is activated remove and add to a small foil cup with avocado oil in the chicken pot.
  • Cover quickly to trap the charchol flavor.
  • Enjoy!
