Freekeh with Chicken – طاجن فريك بالفراخ

Ingredients

  • 4 Chicken Thighs
  • 4 Cups Green Freekeh Soaked Overnight
  • 3 Big Chopped Onion
  • 1 Cup Crushed Tomatoes
  • 1/4 Cup Ground Garlic
  • 1 Teaspoon Black Pepper
  • 2 Teaspoon Corriander
  • 2 Teaspoon Cardemom
  • 1 Teaspoon Salt
  • 1/2 Cup Crushed Nuts
  • 1/2 Cup Rasins
  • 1/2 Cup Butter

For Chicken Marinade

  • 4 Chicken Legs
  • 1 Onion
  • 1 Teaspoon Cardomom
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Salt
  • Pinch of Cinnamon
  • 1 Teaspoon Ground Corriander

For Frikeh

  • 4 Cups Green Frikeh
  • 2 Diced Onion
  • 1 Teaspoon Cardomom
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Salt
  • Pinch of Cinnamon
  • 1 Teaspoon Ground Corriander
  • 1/2 Cup Crushed Nuts
  • 1/2 Cup Rasins
  • 1/2 Cup Butter
  • 1/4 Cup Minced Garlic

Directions

  • Marinate the chicken by mixing all the ingredients and stuffing the chicken legs with the marinade under skin and all around.
  • Brush the top of the chicken legs with a mix of 2 tablespoons crushed tomatoes and 1 tablespoon minced garlic.
  • In a preheated pan add butter.
  • Add your chopped onions, and let it soften then add your nuts and garlic.
  • Make a well in the middle, add some butter and put your spices to toast for a few seconds before adding the crushed tomatoes.
  • As soon as the crushed tomatoes starts bubbling add your green soaked friekeh and stir.
  • let it toss for a few minutes.
  • Add your friekeh to your baking pan and add 2 cups of chicken stock.
  • Add the marinated chicken on top and cover with foil.
  • Preheat your oven to 500 and add your freekeh to lower rack for 1 hour.
  • Uncover The foil wrap and move it the the middle rack to broil until chicken is Golden brown.
